It is a very popular onion in top restaurants and Gourmet shops, given its delicate flavour and texture.
It is round and slightly “flattened” (like a mushroom). Its pale-yellow skin is delicate and shiny.
They are extra sweet. A real treat for the palate.
Buying and storing tips
They are sold year-round, normally in mesh bags. They should be kept in a cool and dark place.
They are extremely easy to digest and are enjoyed even when peeling them. Use a sharp knife to cut off and discard the roots and stem of the onion and carefully remove the skin. Given their high sugar content, they are perfect to caramelise. Roasted, sweet onions are a delicacy. They are also exquisite sautéed with green beans and mushrooms or as a garnish for fish and meat dishes.
